Chocolate Ice cream sandwich cookie

 I opened the freezer yesterday and saw a box of ice cream, well, at first I wanted to eat it right away, haha.

 But it's too easy and too plain, I think I wanted it to be more special. There were so many ideas in my head at that time, brownie, cake, waffle cone etc., I wanted to make them all. Anyway I had to choose 1 recipe, and I thought I want to try this one. This cookie is close to the brownie that I made before (you can read the recipe here) but it has more flour and contains no nut. The texture is a bit crumby, that good when you turn it into Ice cream sandwich cookie as you can bite it easily.
When coming out of the oven the cookie will be very soft but it will firm up when cool, don't worried. 

Chocolate Ice cream sandwich cookie
Makes 8 cookies (or 4 Ice cream sandwich cookies)



170g .............................. Dark chocolate
25g ................................ Butter
60g ................................ All purpose flour
1/4tsp ............................ Baking powder
1/4tsp ............................ Salt
1 .................................... Egg (about 60g)
50g ................................ Granulated sugar
.......................................​your favourite ice cream





 Put chocolate and butter into a microwavable bowl, heat in the microwave at low power for 2-3 minutes.


 Stir until melt completely, let it cool before using.


 Beat the egg with sugar until thick and light in colour.


 Pour the melted chocolate mixture into the egg bowl.


 Fold until lightly combine.


 Sift the flour, baking powder and salt into the bowl.


 Fold to combine.


 Cover with plastic wrap, and refrigerate for at least 15 minutes.
Meanwhile preheat an oven to 190C.


 Use 5 cm scoop to shape the dough.


 Bake for 12 minutes.
Let the cookies cool on the pan.


Sandwich 2 pieces of cookie with your favourite ice cream, enjoy!
